Book Description
This is the second volume in the 4-volume set Analysis and Control Methods in the Food Industy, edited by J-L. Multon. The book describes all the main analytical techniques used in the food industry. Physical and chemical principles underlying the techniques are reviewed, and the limitations of the techniques and their fields of application are defined. The scope is unusually wide, encompassing physical, chemical, engineering, biochemical, toxicologial, and sensory analysis techniques. It presents a wide variety of analytical methods, including those based on spetroscopy, chromatography, electrophoresis, thermal analysis, electrochemical analysis, rheology and molecular sieves.
Book Description
The laboratory exercises in this manual are coordinated with Inquiry into Life. The text emphasizes how we can apply biological knowledge to our own lives and to our relationships with other organisms. Although each laboratory is referenced to the appropriate chapter in Inquiry into Life, this manual may be used in coordination with other general biology texts. This manual can be adapted to a variety of course orientations and designs. There are a sufficient number of laboratories to permit a choice of activities over the length of the course. Many activities may be performed as demonstrations rather than as student activities, thereby shortening the time required to cover a particular concept.

The book was in tact but I found out later that some pages in the index were missing. Good book overall.

Great reading!.......2007-01-20
This book should be read along with viewing the PBS show by the same name "Tall Blondes". Both complement the other very well. The author speaks of a subject that she obviously has a passion for and that feeling comes through in the book as well as the documentary. Recommended reading/viewing for everyone - not just those Tall Blondes in the world.
This book is a hoot!.......2001-04-29
As a Clinical Massage Therapist (for both humans and non), and the only captive/agressive (animal) TTouch practitioner in my state, I do a lot of volunteer work at my local Zoological park. I'm never quite sure what I'll be working on when I go out, so I like to pick up info on various animals when I can and just read ahead. When I placed my order, I was looking for a little more scientific data, but even without the clinical research I was most pleased with what showed up at my door!
Ms. Sherr's sincere passion for the creature is evident on every page, and the book itself is simply a pleasure to hold and read. It has a nicely designed slick cover and the binding is top-notch. This book will last for ages if taken care of, but as appealing as the images have been to my daugher, I have to keep a close eye on it.
There are interesting facts, and some fiction is dispelled. There's tons of history and beautiful pix on every page.
No, the book is not the end-all be-all of information, but it is well worth the price, and there are even a few used ones for sale above (though not mine. . . you can't have it. . . just back awaaaaay from the book.)
I highly recommend this book for anyone with a passing interest or even a non-veterinary passion for the animal!
Big Disappointment.......2001-03-10
I was looking for a scientific book about giraffes and at the time this was all I could find so I purchased it. The book contains wonderful pictures otherwise I would give it zero stars. The book has almost no scientific information and is filled with a lot of irrelevant and dull quotes about giraffes (made by historical figures) , along with other cutesy stuff. AND I still have not found a current scientific/field study type book about giraffes!! This book might be good to read to the kids.
"Tall Blondes" gives a rush to the giraffe lover........1999-01-11
The personality of the giraffe is seen throughout this book. I wish humans could learn from the giraffe's peace in his world, the eye contact, the sharing, the adaption to the world as it is. Lynn Sherr has had the best opportunity in the world. All I want to know is "Can I go to Nairobi and pet the giraffes too? Excellant Book. You will love it!

A Trip to Remember.......2006-10-05
Two years ago, a staff writer for the Richmond Times-Dispatch wrote about biking the Skyline Drive in Virginia and my interest was peaked. My son turned 16 so I wanted to plan an unique summer trip for the two of us. We decided to bike the Blue Ridge from Afton Mountain (MP 0) to Blowing Rock NC (MP 302). We bought the Skinner book and searched the Internet for ideas.
The Skinner book proved to be exceptional; every page was "dog-eared" by the trips' end. I discovered the book contained more information than the first couple readings revealed. A few things, the Skinners give detailed advice on the location of stores, and unfortunately, due to recent hurricane damage a couple shut down, so did a restaurant we relied on for a stop, but found a new one further down the road. I plan to offer the "findings" to the Skinners for the next edition. Second, reserve your lodging in advance. A motorcycle convention in the Meadows of Dan took up all the lodging for a 15 mile radius, ten days prior to our trip. Third, the Blue Ridge ride is extremely demanding. The Skinner's sound like seasoned riders, but it was a struggle for me. (I had to walk a portion of the steep grades.)
Much can be said about the wonderful resource the Blue Ridge is. My best advice is to take a couple day trips to learn your limits and and develop realistic expectations. Then bring a good camera and enjoy!
550 mile road test.......2006-09-06
I have been a long distance cyclist for about 40 years on and off -
since long before I could drive. Though I've lived in Virginia for
20 of those years, for some reason I never thought about the Skline
Drive and Blue Ridge Parkway! Amazing - since I've ridden up and
down parts of the East and West coasts, to the midwest, and through
parts of Europe and Australia.
My brother suggested I ride the lengths of the two parkways, and I bought
Riding the Blue Ridge, plus several other books, to help my planning.
I just returned from riding 550 miles on those two roads.
Though my riding style is different from
the Skinners', I travel on a racing bike carrying minimal equipment
plus credit cards, I found their book by far the most helpful, and
its pages, which I tore out and then discarded after passing through
various sections, became the Bible of my trip.
The descriptions of the ride and places along the route were accurate
and brief enough to fit into a portable and readable book. A good
example of how the brief descriptions were so apt is the small hotel
and store at Benge Gap: the book mentions it's easy to "zip by" -
and given that the rain and wind were fierce as I approached, I
really did not want to miss that stop. Those few words of caution
did the trick - I found it no problem but otherwise would definitely
have zipped by! Like all the places they mention, the description of
what was there was 100% reliable and accurate.
Besides my background in long distance riding, I have also raced and
I am still a strong hill climber. I found the greatest inaccuracy of
the book that it does not adequately describe the difficulty of this
ride. I appreciate that the book is written by people who are
accomplished riders, and that a mission of the book is to introduce
this ride to a wider group of people. But, for instance, the book
might leave the impression that riding from, say, Front Royal to Big
Meadows is a reasonable stage on the bike for the average tourist who
takes her time. While that may be true for some, I would suggest
it mention explicitly that this ride includes over 5000 feet of total
climbing, most of it at grades greater than 5%, and should be considered
difficult.
As another example, the ride going South from Volunteer Gap to Peaks
of Otter is among the most challenging anywhere in the East including a single climb of over 3300 feet at a steady 6% grade. There is no mention in the book that this segment is difficult even for highly capable cyclists.
I feel the book could be improved by, for example, adding a separate
section describing the level of challenge involved in the rides, as
is done in many hiking and cross-country ski guides. Not to scare
the reader or create some elitist idea about riding, but so that
people are prepared both in their training and in their daily
planning. Any rider is advised to plan fewer daily miles along these roads than
they are accustomed to.
I used the book to engineer each day's ride, and to make reservations
for each evening. It was immensely helpful and I'm truly grateful
to the authors and for the book - it made my trip possible and
enjoyable.
Anticipates Everything.......2003-02-12
There are many cycling guides, but this is one of the most practical and well-organized. As other reviewers state, the real value of the book is its collection of information on camping, nearby hotels, access points, points of interest, etc. The authors also have a wonderful "you can do it" attitude in their narrative style. Their encouragement inspired me to ride the Skyline Drive last fall, to my great enjoyment. I would quibble, by the way, with their elevation profiles. I certainly discovered hills that they don't tell you about! Supplement your planning with one of the fine topographic map products for a better sense of what awaits you.
a useful tool for anyone considering riding the BRP or SLD.......2001-08-29
I just returned from a weekend riding the 105 mile Skyline Drive in VA. The Skinners' book was an invaluable resource to me in preparing for & executing my trip. The advice is practical, the information invaluable as you plot out your journey. I am already planning my next weekend trip (Afton Mt to Roanoke) using this as my Bible! If you have any interest in cycling all or part of the BRP/SLD, this book will first whet your appetite, then serve as your guidebook/Bible.
A must!.......2001-07-28
It's so easy to pass facilities, accomodations and attractions along the Blue Ridge Parkway! This book lists them all, campings, B&Bs, country stores, and more, along with the best way to get there. A real must for anyone planning to have a great trip on the Blue Ridge and Skyline Drive. And the elevation maps are a great help too.

A Double Challenge.......2000-08-15
Alan Roxburgh has written a small book (aprox. 67 pages), but it is the best use of paper and ink I have read in a long time. He sets forth a description of the double challenge facing the modern/postmodern and un-christendomed church, in clear, crisp and stark tones. Using a paradigm of "marginality," Roxburgh explains how that, within the matrix of modernity-modernization, the church was marginalized (pushed from the center) into a chaplain's role, but that with the onset of post-modernity (or hyper-modernity) the church now faces a culture that has been marginalized as well (now there is NO center). He calls this "double-whammy" facing us the experience of "liminality." This book offers a description of depth unlike the "five easy answers to ten difficult problems" approach we are usually given. It is a breath of reality we desperately need, a wake-up call to the complexity of the issues we face. But, by far, the most fruitful aspect to this work is his description of the pastoral leadership that the "missionary congregation" needs before the church will become a new community of faith. If you are a pastor, the images Roxburgh gives us here are deeply thought-provoking and as such they are an extremely helpful motif.
Book Description
Whether they came from Sioux Falls or the Bronx, over half a million Jews entered the U.S. armed forces during the Second World War. Uprooted from their working- and middle-class neighborhoods, they joined every branch of the military and saw action on all fronts. Deborah Dash Moore offers an unprecedented view of the struggles these GI Jews faced, having to battle not only the enemy but also the prejudices of their fellow soldiers.
Through memoirs, oral histories, and letters, Moore charts the lives of fifteen young Jewish men as they faced military service and tried to make sense of its demands. From confronting pork chops to enduring front-line combat, from the temporary solace of Jewish worship to harrowing encounters with death camp survivors, we come to understand how these soldiers wrestled with what it meant to be an American and a Jew.
Moore shows how military service in World War II transformed this generation of Jews, reshaping Jewish life in America and abroad. These men challenged perceptions of Jews as simply victims of the war, and encouraged Jews throughout the diaspora to fight for what was right. At the same time, service strengthened Jews' identification with American democratic ideals, even as it confirmed the importance of their Jewish identity. GI Jews is a powerful, intimate portrayal of the costs of a conflict that was at once physical, emotional, and spiritual, as well as its profound consequences for these hitherto overlooked members of the "greatest generation."

Ambitious History And Analysis.......2007-05-21
"GI Jews" by Deborah dash Moore. "How World War II Changed A Generation". Belknap Press, Harvard University, 2004.
The title is catchy: "GI Jews", reminding me of the toys, called "GI Joe". My son, Sean, (now a Marine Corps veteran), played with GI Joes in the early1980s. The real theme of this book, however, is expressed in the subtitle: "How World War II Changed a Generation ". How the War changed a generation of Jews. Prior to the War, both Judaism and Catholicism had been outsiders to the American dream. As Dr. Moore says on page 10, "Judaism assumed an American legitimacy unanticipated at the start of the war. Protestantism, Catholicism and Judaism were deemed to share common values that made them the religions of democracy". Further, "... (a)cceptance of the Judeo-Christian tradition in the armed forces would force Protestants to share the Christian label with Catholics and include Jews as equal partners in America". (p.10). Tis a consummation devoutly to be prayed for.
In general, this book deals with the impact on individual Jews, from Jews who were exceedingly pious to men who were hardly observant Jews ... i.e. Jews in name only. The author traces, generally in chronological order, how young Jewish men became part of the American Armed Forces, were trained and then shipped to overseas assignments, both combat and non-combat. Many of the men who were subjects of this book, came from the New York City environment, (of interest to me, since I was born, raised and educated in Hell's Kitchen. I also went to high school at 161st Street and Grand Concourse in the Bronx see page 60).
Dietary restrictions presented a challenge to religious Jews. In the chapter, entitled, "Eating Ham For Uncle Sam", (pages 49 to 85), the author, Deborah Dash Moore, recounts how "Uncle Sam" virtually ignore the ancient dietary restrictions of Jews, and the poor fellows had to eat ham or starve. Despite the author's analysis of the new sensitivity of Protestant America, when, as an example, Tip O'Neill (1912-1994) was invited to the White House for a freshman congressman dinner (1953) with then President Dwight D. Eisenhower, the menu was steak...which tip O'Neill could not eat since it was Friday. Catholics did not eat meat on Friday. The future Speaker of the House was vocal enough to demand something other than meat, and the White House chef plopped salmon from a can onto O'Neill's plate.
Another example of how things change slowly: Dr. Moore recounts how, at a USO dance in Florida , the "town girls" were happy to discover that although Walters was from Brooklyn, he was Jewish and NOT Irish Catholic. (See pages 70-71). In 1958, I was stationed at the Naval Air Technical Training Center in Memphis. I went to a USO dance in downtown Memphis. The southern Belle asked me where I was from. When I answered New York City, she asked, "Are you Jewish?" "No.", I replied, "Worse yet, I'm Catholic." The Southern Belle turned her back and walked away. In Memphis, it was impossible to get a pizza or lasagna; I expect that has changed today. By the way, in 1958, the "Colored" and "White" signs were still on the water fountains.
The author includes a chapter on "Worshipping Together", which, on page 121 has the Douay Rheims version of the bible (the Catholic English version, older than the King James version in English), quoted as saving "Jews are Synagogue of Satan". I looked up the Douay version on the WEB, as the Douay English is so old that I do not have a copy in the house. The WEB does have the quotation "Jews are Synagogue of Satan" but also has the negation, "...but they are not".... So, I do not understand the protest of the Jewish chaplains, as recorded on page 121. By the way, the King James version was used to force the Irish to learn English and to stop using Irish Gaelic.
This book mentions personal reminisces of the "GI Jews", but there are really not many explicit combat experiences as so many recent World War II accounts have. Becoming supersensitive, I began to enumerate how many times the author has the "Irish" protrayed as the offending or involved ethnic group. On page 67, "...a bunch of Irish kids" beat up on Minkow. Prior to the war, the only Irish he had seen were "...Irish conductors on the 167 street trolley". On page 185, POWs were picking on a Jewish POW until ".. a big Irish guy" intervened. That is enough for now. What about the other ethnic groups? Recall that we were fighting not only Germans, but also Italians.
Finally, I wish that the author had spent more time on the Army Specialized Training Program (A.S.T.P.), especially the unit at CCNY. The Army Specialized Training Program (A.S.T.P.), was mentioned, ever so briefly, in passing on pages 40, 80, 87 and 125, as just some examples. Just to correct one mistake, the "USS Hornet" , CV-8 or CV-12, was an aircraft carrier, not a battleship as Dr. Moore states.
Being a Jewish GI during WWII.......2007-05-13
The author captures the full flavor of antsemitism in the Armed Forces during the war and for the Jews who served during the war years is especially meaningful. These men readily identify with the subtle and not so subtle communication of discrimination and the consequence of institutionalized antisemitism.
A superb telling of the Jewish GIs' story in World War II.......2005-01-18
Deborah Dash Moore's GI Jews is a moving book which provides insight into the Jewish American experience in World War II. Following the tales of more than fifteen Jewish GIs from before the United States' involvement in World War II through their return home, Moore paints a picture of what it was like to be a Jewish American and a Jewish American soldier in World War II.
Focusing primarily on the European Theater where American Jews were fighting not just for their country but also for the fate of European Jews, Moore discusses how Jewish GIs dealt with their Jewishness and integrated their religion into their identity as a soldier. Moore begins by describing how American Jews who would later fight in the war reacted to the outbreak of war in Europe. The Japanese attack on Pearl Harbor and Nazi domination of the European continent forced many of these men to reevaluate their philosophies and fight in support of FDR's four essential freedoms.
But before these men could engage the true enemy, they had to battle anti-semitism while trying to enlist in the United States' armed forces and also later on when confronting the prejudices of their fellow soldiers who believed Jews were cowards, sloths, poor soldiers and poor leaders. These Jewish GIs would go on to prove themselves in battle, but first they would be forced to fight for their comrades' respect as soldiers.
Along the way, Jewish GIs would also come face to face with Nazi persecution and slaughter of Europe's Jews, and Moore spends some time describing the ways Jewish GIs reacted to what they saw of the Holocaust. Several of the men were Zionists before the war, but Moore describes how witnessing the effect of the Holocaust first hand made many Jewish Gis ardent Zionists.
This book is simply a superb and well-written account of the Jewish GI experience. As such, it provides a much needed and unique perspective on World War II.
