                Book Description

Mina knows that cooks like to master one recipe but then try different flavors with the main ingredient. MICHAEL MINA reveals how to recreate his trio concept, where a master recipe is followed by three flavor variations, each with its own variations and accompanied by side dishes created just for that version. A crispy loin of pork can be served with an orange/carrot, apple/sage, or tomato/corn combination of accompaniments. Although the flavor combinations create a sense of complexity, the recipes themselves are simple.Accompanying the trios are Mina's classic and most-requested recipes from his acclaimed restaurants, including Whole Fried Chicken with Truffled Macaroni and Cheese, and Root Beer Float with Warm Chocolate Chip Cookies. This book is a must-have for any cook with an adventurous palate.

                2 out of 5 stars Not Mina's Food.......2007-02-15

If you know Michael "Haj" Mina and where his real influences come from you will know that this book does not contain his work, but rather the work of Chef George Morrone whom Mina trained under and worked for, for over a decade.

For example the Mussel Soufflé with the Saffron Sauce originally came from a seafood Soufflé pioneered at the Hotel Bel-Air in Los Angeles back in 1988 - believe it or not.

At the time Morrone was talking about opening his dream restaurant "Aqua." He eventually did and it became the hottest seafood restaurant in San Francisco. Mina went along as Morrone's right hand man. After Morrone left Aqua, Mina stayed on as chef. He parlayed this through hard work and a little luck and Andre Agassi into the Mina Group.

He may be a good business man but the creator and the genius behind his food is not him. Though Mina does give Morrone credit in the book Morrone deserves more - he deserves his name on the cover.

Still it's an awesome book and written more for a professional than the average home cook.

4 out of 5 stars Great book for a budding Chef.......2007-01-19

This book is a very good book, but not for someone who wants to just throw something together quickly. It's got some very sophisticated recipes and some quite complicated. All-in-all, it's a very good book, but if you're a cook and not a chef; I would look for something a bit simpler to cook from. On the other hand, if you love to cook and impress, this is the book for you.

4 out of 5 stars Beautiful cookbook with pictures to match........2007-01-12

I had gone to Michael Mina in SF with some friends, who are also chefs, and they tried to get a recipe but couldn't. I found the cookbook while trying to search the internet for the recipe and thought "what a perfect Christmas gift". They LOVED it! The photography is beautiful and it shows exactly how he plates the food. Unless you are a true chef, I'm not sure most could handle the recipes but if you love great food and the challenge of cooking. This is a book for you.

                5 out of 5 stars Gorgeous Cookbook.......2006-12-02

This is really a beautiful book, whether you cook from it or just aspire to cook from it. Having enjoyed an incredible evening at Michael Mina's namesake restaurant in San Francisco's Union Square, I can say that this book captures the experience perfectly. Also, Mr. Mina shares not only his insight and thoughtful introductions with each section and recipe, he also discusses his journey to success, and includes his family and staff along the way.

                Book Description
In October 1985, at age 27, Danny Meyer, with a good idea and scant experience, opened what would become one of New York City's most revered restaurants--Union Square Cafe. Little more than twenty years later, Danny is the CEO of one of the world's most dynamic restaurant organizations, which includes 11 unique dining establishments, each at the top of its game. How has he done it? How has he consistently beaten the odds and set the competitive bar in one of the toughest trades around?

In this landmark book, Danny shares the lessons he's learned while developing the winning recipe for doing the business he calls "enlightened hospitality." This innovative philosophy emphasizes putting the power of hospitality to work in a new and counterintuitive way: The first and most important application of hospitality is to the people who work for you, and then, in descending order of priority, to the guests, the community, the suppliers, and the investors. This way of prioritizing stands the more traditional business models on their heads, but Danny considers it the foundation of every success that he and his restaurants have achieved.

Full of behind-the-scenes history on the creation of Danny's most famous restaurants and the anecdotes, advice, and lessons he has accumulated on his long and ecstatic journey to the top of the American restaurant scene, Setting the Table is a treasure trove of innovative insights that are applicable to any business or organization.

Service with a Smile: Dishing with Danny Meyer
Is the customer always right? According to Danny Meyer, one of America's leading restauranteurs, the answer is no--but "they must always feel heard." Named one of the most influential New Yorkers of 2006 by New York magazine, Meyer, the founder and co-owner of 11 of Manhattan's most influential restaurants, including Union Square Cafe, Gramercy Tavern, Tabla, The Modern, Blue Smoke, and Shake Shack, has penned Setting the Table: The Transforming Power of Hospitality, a business book that reads like food lit and equal part personal memoir. Amazon.com senior editor Brad Thomas Parsons took some time from his daily long-distance day-dreaming of Shake Shack and caught up with the ever-gracious Danny Meyer over e-mail to ask about his new book, the Food Network, his favorite cookbooks, insider tips on dining out, and much more.

                    Book Description

In a rapidly changing economical environment, quick adaptation is one of the crucial tasks for modern management and permanent learning is a key-factor in the struggle for successfully coping with this challenge. The learning process itself is based not only upon the information gathered on the market, but also upon the totality of knowledge within the company. This book develops a theory of a firm that is based on these principles rather than on optimization and classical equilibrium. It uses quantitative models to describe adaptive firm behavior, the various types of learning as well as various domains of application (organization of new production development, adoption of business models, market entry etc.). It gives an introduction to the various mathematical models of learning and to the applications to problems in microeconomics as well as in business administration. The reader can expect a comprehensive introduction to the subject, its significance for economic theory and managerial practice.

                          Book Description

Economists all too often assume that ecosystem and population dynamics are subject to convex (even linear) processes. However, research by ecosystem and population ecologists has shown that the processes in question are very often non-convex. This has important implications for environmental and resource economics. Typically, a system under study or being managed would contain multiple basins of attraction. So the system would flip from one basin to another if a "threshold" (mathematically, a bifurcation) were crossed. Furthermore, the flip could be irreversible. But even if it were reversible, the system could well display hysteresis. The latter eventuality means that in order to entice the system to return to its original basin of attraction, a different and possibly costly path has to be traced. A mistake in management may then be a lot more costly than envisaged. An example would be a possible flip of the Gulf Stream owing to fresh water intrusion from melting glaciers during global warming.

These conclusions offer a sharper interpretation of the so-called precautionary principle. Moreover, the structure of optimum taxes and subsidies that Nature calls for is likely to be far more complicated than has been envisaged so far in environmental and resource economics. All this implies that environmental and resource economists would be wise to work closely with ecosystem and population ecologists. There is a great deal more to learn in the economics of non-convex ecosystems.

                          Book Description

Philip Cooke and Kevin Morgan explore important issues of corporate reorganization in the context of heightened global competition. Their special focus is upon how firms associate with regional milieux. Innovation is a key factor in corporate and regional economic performance and the authors show how interactive innovation based on collective learning and associative practices are becoming increasingly significant. In-depth studies of inter-firm and firm-agency interactions are presented for four European regions: Baden-Wurttemberg and Emilia-Romagna as accomplished regional economies; Wales and the Basque Country as learning regions. The book is theoretically informed by an evolutionary economics perspective and draws policy conclusions which emphasise the importance of decentralized industrial policy in support of both corporate and regional economic development ambitions. It concludes that the associational economy may be the `third way' between state and market co-ordination of modern economies.

Associational economics is something that reshapes the studies of regional sciences. Philip Cooke and Kevin Morgan, both professors of the University of Whales, explore how social capital can make a difference in the development strategies of regions and countries. This debate is very interesting for the developing countries. As a Brazilian professor, I'm very interesting in such matters. Since the end of the military regime we have been searching for a new model for development policies. Neoliberalism failed and there is no turning back to the substitution of imports model. This book offers a diversity of policies that can be empirically experimented.

Protection and sound management of coastal and marine areas are acknowledged as important mechanisms for alleviating poverty in the developing tropics. Tanzania has had considerable practical experience with a diversity of models that rely on private sector partnerships, community co-management regimes, and government-led initiatives for marine protection. Blueprint 2050 outlines a vision of what a protected area system could look like in 50 years. It draws on state-of-the-art ecosystem, socioeconomic, financial, and institutional background studies to paint a picture that emphasizes community-based adaptive co-management within a flexible system of eight protected area networks, one of which is the Exclusive Economic Zone.

                                        Book Description

This book identifies rent-seeking behaviour as one of the main causes of poor economic performance, observed, among other places, in many countries of Africa. Rent-seeking describes the ability to capture incomes without producing output or making a productive contribution. Since rent-seekers are often an integral part of an ailing economy and resist the adoption of reforms, understanding and anticipating rent-seeking behaviour is crucial for designing more adequate and effective policy reforms.

Following a comprehensive theoretical elaboration of the causes, properties and consequences of rents and rent-seeking strategies in the context of economic reforms and development cooperation, this book presents a detailed case study on rent-seeking within the civil service, parastatal sector and business community. It demonstrates how rent-seekers in Tanzania have systematically delayed or undermined reforms such as tax reforms, trade liberalisation, privatisation or any reforms that aim to restrain corruption and embezzlement. The case study quantifies and evaluates the rent-seeking behaviour of more than 300 parastatal companies, considering their profits and losses, the quality and timeliness of their accounting and the magnitude of support they obtained from 16 different sources.

Though it is often difficult to describe rent-seeking empirically—many aspects are hidden and obscured by all sorts of fake explanations—the study at hand explores the maze of endless, general and disaggregated information and traces as many indications of rent-seeking as possible. This broad and detailed approach makes the study unique not only for Tanzania but also within the literature on rent-seeking and development cooperation.

                                                Book Description

Declining soil fertility has been identified as the fundamental agronomic cause for declining per capita food production in Africa. This has resulted in poverty, wide spread malnutrition and massive environmental degradation. Governments, international donors and research centers have made great efforts to address the issue of declining soil fertility at continental and national scales. This book reviews some of the efforts in Tanzania to alleviate soil fertility constraints. The book presents and analyzes the ISFM policy debates at international and Tanzanian level, the Integrated Plant Nutrient Management (IPNM) database and constraint-options model created for Tanzania, factors influencing ISFM in Tanzania and the participatory approaches used by different projects across the country. It concludes by suggesting more comprehensive and user-friendly approaches to ISFM and recommending policy issues to facilitate their implementation.
